China's death rate is 5%. But we don't trust numbers from China and Iran.

Not true. The cruise ships have been ideal samples as they have a known number of people on them and it is quite easy to test a large percentage of the sample.
The death rate for the cruise ships has been about 2%. So there isn't some huge number on the ships who haven't been tested.
