If you do the National Parks (and I highly recommend it), don't forget to get the Annual Pass ($80). It'll save you a lot of money on entrance fees. It also covers day use fees for various National Forest or BLM attractions.
Utah is awesome, but a little cold still. I'd start with Arizona or California, if you're coming that far south. That's what the snowbirds do.
