When the brass starts to give off a good shine in the sun, they litterally fall to the ground easily when they ripen due to their weight. Then you can collect the 5.56 seeds from them as well. You might need to begin with a starter bullet tree that has 22.cal or 17hmr to get going. But if you manage your bullet tree and develop a brass thumb you can get that sucker producing some 338 lapua or 50.cal.
It depends on what kind of bullets you want to grow. Example: If you want 30-30 or .30-06 I would recomend heirloom. But if you want a new type like say the 6.5 Creedmoor then you will want organic.

I was gonna recommend the online distributor where I get my seeds, but they've recently limited their shipments to commercial customers only until April 6, and they may extend it further than that. I was thinking beets and beet seed size when I ordered...
