Do you have a mexican/hispanic market in town?

Go there and you'll find all the product you need at prices you won't believe, if your area is anything like mine. They've been a Godsend. They stay open and offer all kinds of stuff they make fresh daily I had never heard of but am learning about every day. They even sell fresh cracklins (strips of deep fried pork belly, which is just bacon before it is cured and smoked) by the #!

Granted, you might be in the foothills of the Dakotas, so a Hispanic market might not be an option for you. But, I'm in the Southeastern US, and have confirmed this also to be true in LA, California, which I imagine is pretty sparse just based on the numbers of people, so I wanted to make sure you knew.

I just got done smoking two pork shoulders and am dry-brining a turkey right now for the fryer tomorrow.

I plan to lean-in to cooking/smoking larger cuts that we can eat over a few days and distribute to people that may need it. Maybe smoke some bacon if I can get my hands on a few pork bellies. Just need a slicer to cut rashers and I'd be in business.
