Are you saying that Apple can read your email content? An article from 2014 claims that they have the right but haven't seen anything lately. There are apps such as Signal, session, telegram that encrypt messages as well as gpt, pgp that encrypt content.

However, this merely prevents tactical intelligence acquisition. The internet is forever and at some point in the near future, all encryption will fall to technology (Quantum computing)
