The passover was a covenant between God and his followers - the blood would signify what later came to be known as Jesus' sacrifice - it was intended to shield them from the wrath of God.
As far as I know it had nothing to do with demons, although similar practices are done in places like China which echo the demon's desire to present themselves like God.
