Company wide email asks everyone to join in at 1PM and kneel to end racism. It doesn't say you must do it, but there is a laundry list of reasons why you should. Basically guilting people into kneeling. This is prominent cancer research center with a huge diverse employee population. Wife has been there for 12 years, loves everyone and they love her back. She feels like if she doesn't do it that people will think she's racist.

I asked. She's nervous taking copies of emails from a hospital office workplace. Maybe she can snap a pic of the email.
If her workplace's mail marshal will allow it, she can forward the email to a personal email account. This is the best option because it will have digital signatures on it proving it was created by someone within the organization. You'll have names, dates, everything, they won't be able to deny it.
The next best thing is a picture, make sure she clearly gets the "from" line and the email signature.
Both are perfectly legal, hospital or otherwise.
Do not print it out, that doesn't hold much legal weight as evidence since it can be more easily faked.

i could tell you how strong of a proof it is by looking at it (it depends on the network and server settings - some places still dont have dkim) but obviously I would not recommend sending this to a random internet dude.
also if they use gmail without a gsuite account they will subponea google for logs which is a strong proof. if they use a gsuite account their admin can delete all proof. if they dont use gmail "it depends"
I mean, I haven't had as much digital forensics training as I might like, but short of actually seizing their mail marshal and write protect copying it for evidence, show source is pretty solid by evidentiary standards.
