Lack of vitamin B12, which is naturally found only in animal products, causes personality changes: irritability, depression and others. Most vegans don't take enough supplements to prevent this. Vegetarians are not so insane, since they get enough B12 from milk.

Lack of consistent, quality protein, too. The brain literally starts to break down.
