Lettuce takes about 60 days. Looks like they have almost enough garden to sustain 1 person for a few weeks ... maybe a little longer if there's a lot of wildlife... in the middle of the city.
They didnt even remove the grass. Just spread compost and potting soil over it. The grass alone will choke everyone out in about a week from that field anyway.
