Generally, when you buy a build kit it comes coated and milled. You may be thinking of 80% lowers, which you have to finish milling but has the advantage of not having a serial number. If that’s the route you want to take, you can normally buy the jig wherever you can buy the 80% lower. Just use engine paint to coat the inside once you’re finished milling it.
This. I love the 5.56 S&W MP sport. It’s priced reasonably and shoots good enough to put a hole in a man sized target from a safe distance (with proper and adequate training of course).

It can be helpful to be specific especially if it has to do with your occupation. Maybe you have to have cash, valuables, controlled substances in your possession. Windham Weaponry is pretty much the old Bushmaster. Same owner, same facility and same workforce. I own a couple of their carbines. They make good stuff.
I like springfield saints. I have one. They are usually fitted with some nice, upgraded furniture right out the box. Mine came with BCM mods that usually get purchased after market. Saints wont break the bank, but I would put them on the middle to high end of entry level AR pricing.
Before I would have suggested one from FN15 Tactical, but these days Pametto State Armory is a great place to look for an AR.
Also, set aside some $$ for a good trigger. I bought a Velocity MPC for my 6.5 Grendel build. The difference is night and day -- best upgrade for any AR is a good trigger.
So from now on, all my triggers will be drop-in triggers from Velocity.

If you’re willing to spend more than that, there are a lot of good ways to go and some other Pedes might have some better suggestions but I was super happy about my decision.

I have a left handed AR 15 that I built under the guidance of a knowledgeable friend. Total cost was less than $1,000. It's a fun way to get a new weapon, and could probably be done more cheaply.
For 80% lowers: is there a reason to choose one jig over another? Been looking at easy jig 2 and 4d tactical, but they're pretty expensive and I'm wondering if it's worth it over something cheaper like the easy jig 1. Also, is aluminum sill far superior to poly? And when going with an 80% does the brand matter, or is it ok to just find the cheapest one available because they're all the same basic material and structure (with aluminum, at least)?

Hopefully will never needed it but after seeing people getting boxed-by protesters and attacked, seems like a good option. Ruger MPR is my recommendation if you want a nice rail out of the box at a reasonable price.
Smith and Wesson MP Sport 2 if you like that styling better is a little cheaper, but just as fine a rifle.
MPR is a solid first AR. I bought mine the month they were released and really enjoy it.
I've heard too many complaints about the MP Sport to recommend it as a first AR. I think there was a recall on the .22 version.

Today's Bushmaster is a different company using the old name. The original Bushmaster is good to go.

Anything mil-spec is going to be just fine. Honestly you should be asking which brands are no good, which is very few these days.
