Spaniards have a wide variety of skin tones and eye colors. Only the ones that have pale skin are considered white by American standards. In Spain race isn't an option on any form because they don't consider it a mitigating factor for behavior.
Northen spaniards are considerably lighter than their southern counterparts, same in Italy. Obviously a broad generalization but not particularly inaccurate.

Jewish people with Sephardic ancestry would be considered Hispanic in the US. They speak Ladino, a language derived from medieval Castilian Spanish.
