They didn't have to make sure to grow lots of different kinds because it wouldn't travel far, they could just decide to grow corn and only corn and get really good and efficient at it. This increased supply and lowered costs across the board for everyone.
Fresh cuts of meat was the food of the elite before this because the only people who could afford it were either the farmers themselves or people who could afford to have it shipped non-stop on rail cars filled with ice blocks harvested by hand and stored in giant warehouses. Once refrigeration was invented, that same meat could be shipped anywhere and then kept cool once it got there, leading to less waste, less spoilage, therefore lower costs and greater availability, etc.
