Because mail in voting is the "boss" that must be defeated before the democrats can go after the holy grail, internet voting.
What democrats really want is internet voting, but they know they can't just jump straight to that, they need to clear the mail in voting hurdle first.
If they try internet voting, there are way more than enough sensible people (including the military, frankly) who will agree with Trump when he cancels the election.

This war would not be 1 fight requiring 1 general to lead 1 army but rather every town and city would be its own battlefield. Often when Trump acts, he works in secret, then acts, then announces the success of the mission. I understand the worry about voter fraud, but I also trust that Trump is also not going to sit back and allow it either. How about a voter ID executive order. All states must verify a non expired, state ID, Passport or birth certificate to validate and submit a vote. maintain records of this verification and submit to an independent and public ledger for post verification and analysis.

If you insist that voting integrity can be a thing, then please tell me a truly trustworthy institution that can be assigned to it. I bet that your institution will fail by hiring untrustworthy people, having dead voters count, leaking voter ID data or mismatching voter ID data to real people.
Unironically it might help us, minorities are less likely to stand in line for long periods of time and COVID is making it harder and harder to get more polling places. A lot of places are down to 200 where they normally have 2000. If we can cancel at least some of the mail in states a lot of swings will go back to trump.
