Great question. I'd love to see a thorough list. I think just being there and having your eyes and ears open for bad actors is a good start. Making sure people aren't unfairly turned away. Making sure people in line before polls close all get to vote. Making sure people match their IDs (if relevant in your area). Making sure machines appears to be operating normally. Hopefully, others will chime in.
In my state, you have to go through a training session to be a poll worker. They teach you procedure and what to look for with fraud and how to report it.
Don't be put off by the deadline or not being registered in a "major" party in New York. Somehow poll workers often don't show up. You might be called the last minute.
