check Palmetto State Armory or even a local gun shop. There's many "pre-made" kits that'll run great for a decent price. Check your local/state laws as well as some places like commiefornia have severe infringements on your rights to bear arms.

Furthermore, research what you can and cannot have on an ar pistol. And remember if you purchase a Rifle it CANNOT be changed to a pistol but a pistol or lower that is marked correctly when purchased CAN be a pistol or Rifle. Just DO NOT accidentally make a short-barreled rifle 'cuz you don't need the alphabet boys coming down on you.

A guy at the store said you only really need to swap the barrel, I'm a noob so i don't know, it suprised me and didnt seem right. Is it better to get a whole upper? They did recommend .300 specific mags as it helps feeding.

You can take off the front furniture and bust out a barrel wrench, but a normal person would just swap uppers. But yes, he was correct: only difference is the barrel. Mags, bolt, carrier, etc are all interchangeable.
