If you want to work with continuous back-up server, that's kind of out of my scope of expertise because you'll need some software like a VMware and IT knowledge which I don't have. I just got one from a foreclosure sale for 150 bucks with 10 terabytes on it which I just use for stocking stuff. I keep it away from the internet and just slap on an ethernet cable when transferring stuff.
servermonkey.com has some great used and refurb stockage deals.
You could also buy a whole bunch of external hard drives and just use them to transfer stuff onto, but used servers are so much cheaper. Even old oversized pc's with multiple bays work well too.
