The repair people come can never come for at least a week, they charge an arm and a leg, and then they usually end up breaking something else and you need to call them again next week. The downtime, lost sales, lost productivity, possibility of spoiled food you have to throw away, plus the negative customer experience that is so difficult to shake off, isn't worth it. Just always have two of everything you need on site, and buy a new one when one breaks. If it's under warranty, have them try to give you a new one under warranty if possible.
