Ingredients:
Chicken Wings 1 lb.
GOYA Marinade Mojo Criollo ¼ cup
GOYA Bread Crumbs Seasoned Latin Style ½ cup
Flour 2 cups
Pancake mix 1 cup
Canola Oil for frying
Sauce:
GOYA Chipotle Peppers in Adobo Sauce ¼ cup
GOYA Brown Sugar Cane 1 spoon
GOYA Honey 1 spoon
GOYA Minced Garlic 1 teaspoon
GOYA Sazón with Achiote (Annatto) 1 packet
MOJO 1 spoon
Cornstarch ½ teaspoon
Butter 4 spoons (melted)
Recipe Preparation:
Pat wings dry, insert into a gallon Ziploc bag, add GOYA Mojo and marinade, preferably overnight or no less than four hours before cooking.
Add breadcrumbs, pancake mix, flour into a gallon Ziploc bag, pull out wings, shake off excess marinade, discard the rest of marinade, insert wings into breading bag covering wings thoroughly. Set aside.
Prepare the sauce by mixing well all ingredients in a bowl.
Proceed to fry wings at medium-high temperature until crispy, pull out and set wings on tray, brush plenty of sauce on one side then flip wings and repeat. Serve with side.
Side suggestions: GOYA Plantain Chips, GOYA white rice or your favorite fries.
Here's a very easy one: Caribbean Pulled Pork. 1 pork shoulder trimmed of fat, 1/2 bottle GOYA Mojo marinade. Put both in crock pot, add some salt and pepper, set and forget. When done, shred or chop to preference, no other seasoning required. Prep your favorite sides (personally we recommend Cuban GOYA black bean soup and lightly flavored GOYA white rice), make sure you have something that can soak up that amazing juice.
