I don't know about definitive, but for sheer simple understanding... The World of Columbus and Sons by Genevieve Foster (Author, Illustrator)
This Home school classic sets out Colombus' life amidst the times he was living in.
Foster has written about Washington, and Lincoln in the same format. As informative for adults as for children as it places the life within the times and people he lived.
Good question that I'd like to know the answer to too.
Don't know how good it is, but I've flipped through the pages of the 1892 book The Life of Christopher Columbus" by Hale and it looked pretty informative.
If you want to see the modern myths being refuted "The Enemies of Christopher Columbus: Answers to Critical Questions About the Spread of Western Civilization" and "Christopher Columbus The Hero: Defending Columbus From Modern Day Revisionism" both look good.
My apologies for not suggesting a book I've read myself. If you haven't seen Knowing Better's video about him on YT I'd also recommend that.
