As for automobiles, they don't want Amish believers mixing with outsiders to any greater degree than is absolutely necessary. They wish to be as self-contained and self-sufficient as possible.
I have never heard an Amishman say "bullshit," so I can't comment on that one. But if you want to understand the Amish religion, you mustn't look at them through the common lens of Protestant or Catholic. A good introductory text is Amish Society, by John Hostetler.
