The election schedule looks like this: Tuesday November 3, 2020 – Election Day Monday December 14, 2020 – Electors cast their electoral votes Wednesday January 6, 2021 – Congress counts and certifies the electoral votes Wednesday January 20, 2021 – Inauguration Day

Is it even possible to count the mail-in votes and litigate all issues between Nov. 4 (day after election) and Dec. 14 when electors are supposed to cast their votes?

No and this is the plan. This way, even if Trump wins (Kek willing) the Democrats will be able to say he is illegitimate because the electors voted in the College without all of the votes from electorate being counted.
