I highly, highly recommend EVERYONE makes pho a regular thing within their diet. I usually have it as a combination breakfast/lunch meal around 10am and let me tell you: you will not have a more filling and lower calorie plus nutrient packed meal. Pho is not like the soups found in Europe or the Americas, it is not packed full of heavy creams or milks, it does not have any oils in it, its just broth and spices. It has rice noodles, a couple different vegetables, some meats and that is it. It sounds like it wont be good, but its absolutely delicious, the star anise, cardamom pods, and spice cloves pack in so much damn flavor.
It is one of the cleanest meals you can eat. Every wonder why Vietnam is the country with the lowest obesity rate on the planet? Its not because they're starving, its because their diet is so, so clean. Look at the Congo, the poorest country in the world and they have an obesity rate 5 times that of vietnam. Look at Japan, they have an obesity rate just ever so slightly higher than vietnam and Japan is rich.
Eat some pho, support your local pho spot or make it yourself. If you are fat, I guarantee replacing one meal a day with pho will make you lose weight fast even if you do nothing else. A large bowl from a restaurant is going to be under 500 calories and keep you full all day. If I eat pho at 10am, I am not hungry until 6pm. If you have Pho for lunch, you might even be able to comfortably make it the rest of the day eating just a protein bar around 7pm.
Go buy or make some pho. Its cheap even at the restaurants, its fresh, its fulling its natural, its low calorie and its hydrating. What else do you need?
