She's really a living testament to the fact that the best cure for being a liberal is experiencing the outcome of liberal policies. When I met her over a decade ago she was ultra-Left...and then went to work with 'impoverished' students in inner-cities. The degeneracy among the students, the parents, AND the disgusting attitudes from teachers completely changed her. She had enough intelligence to realize that the problem wasn't "racism" it was liberal policies. At this point she's as conservative as I am, and we're hopefully moving to Texas in a few years, baby in tow.

Beaumont is a great town - but if you're thinking you'll commute to Houston .. eek - it can 1hr+ to get through Houston. If you've got a gig with odd hours, it might be better.

I want to be near the water, and I also watch birds. The Texas coast has some of the best birding in the country. Technically further south is the best, but I don't want to live in a blue county, which I assume the border ones are. We were looking southeast of Houston, although east of Houston closer to Louisiana would work too I suppose. My wife LOVES New Orleans, so proximity to that, either by car or short flight is a definite plus.
I don't think we've decided on rural vs suburbs. Probably more rural, or as much as possible, while still being within 30-45 minutes of the gulf.
Water - Ocean, river, or lake?
I ask because all are available.
Of note, coastal water in the gulf isn't the same as east or west coast, but the location in exceptional if you like clear, tropical water on occasion because it's a short flight to the Florida Keys, Mexico's Yucatan peninsula or Belize, the Caymans, etc. Houston is a massive international travel hub and (Thanks to Texas' tort reform) has healthcare people travel from around the world to get access to.
Coastal real estate can vary - Jefferson county is blue to purple, while Orange and Chambers are red. Understand "blue" in Texas isn't like "blue" up north, except for perhaps major metro areas, but even then it's probably not what may have come to expect.
If you want nature, rural, and proximity to NOLA & Houston, consider looking north of Beaumont along the Neches river. The Neches is unique, a protected waterway, and you're within a hour or two of almost everything. Houston (center) is ~90 minutes, Galveston about 2 hours, NOLA is about a 5.5 hr drive, McFadden wildlife refuge along the coast is about 45 minutes away from Beaumont.
If you're after coastal, and NOLA is a draw, Orange county would be a good place to sniff around.
The water ways along that area of the gulf are heavily industrial - so keep that in mind. Cheap waterfront property might indicate a lot of freight and tanker traffic out your back door.
I don't know your budget so I can't make specific recommendations, but zillow can give you an idea of the areas.
I'd suggest visiting Beaumont, and driving around to look at property and areas.
Sometimes people miscalculate just how big Texas is. While you can drive across Iowa in about 4.5 hours, it's 9+ hours across Texas, on the Interstate. From Beaumont to the World Birding Center in Mission, that's around 7 hours.
Another area you might consider is south west of Houston.
Check out the Sargent area. That makes NOLA a 6-7 hour drive - but moves you closer to hill country, Southern costal areas of Texas, Big Bend, the hill country & San Antonio, Austin, and you're still close to Houston.
Consider you can buy a house, near Sargent, on a costal river, with a dock, for less than $250K. Sargent is quasi rural, too. It isn't heavily forested like South East of Houston, though. However, it puts you two hours closer to the World Birding Center in Mission.
It puts you about 4 hours away from Fredericksburg (Luckenbach Texas is near there). There, you'll find vinyards, rivers, small towns, antiquing. It also puts you about 3 hours from Austin, which, despite being heavily blue has great music.
Lastly, culturally, Texas people vary - and they don't really match stereotypes.
I'm a 4th generation Texan, and I've lived across Texas except for far west (El Paso) and far south (Corpus Christy) areas.
And one consistency I've found is this.
There are a few ways to really piss off a majority of Texans:
Take away our guns
Pollute a river where we fish, swim, float, or drink
Be a Karen on almost any topic (from Rodeos to illegal aliens)
Texans, at least Texans like me, love our state and it's natural resources.
In general, in public, everybody is out to have a good time, chill, and enjoy themselves.
Small towns are like any small town. Big cities are sprawling metroplexes.
If avoiding a blue area is a concern, there are two things I recommend - Avoid blue areas in major cities and avoid blue areas along the border.
The border is wonderful country, but I wouldn't recommend living there right now.
I have friends whose houses in the area are regularly broken into by illegals, sometimes violent and destructive.
Used to, you could go to the border towns and cross over and have great food, enjoy music, and pick up cheap prescription drugs. I do NOT recommend doing that now, you're asking for trouble.
Flying to Cancun is easy from Houston, about 2.5 hours - and the Yucutan feels safe and secure, as long as you're not doing stupid crap like trying to hang out a local's club with a Cartel presence. Belize if fantastic - Everyone speaks english, the food is great, and it sports the western hemisphere's largest barrier reef. Fishing there is absolutely phenomenal.
If you go across to Los Cabos area - that's like California's playground. Secure in many areas, incredible coastal golf, whale watching, etc..
Houston has regular flights to Key West, Miami, LA, etc. From Houston, you can get anywhere. A nonstop flight to Miami is about 3 hours, meaning you can be in the Bahamas in under 8 hours.
Another destination that's becoming more popular for Texans, besides the Island states (cayman through St. Thomas through Aruba) is Honduras. Cigars, fishing, Tequila.
Southwest airlines now flies internationally, so tropical destinations are very affordable.
I'm not a big fan of mega resorts with clubs, etc - so when we travel to the Yucatán area, we prefer to go to the islands like Isla Mujeres or Cozumel (but not as much any more).
After moving to Texas, a two hour drive will become normal. If you're in rural areas, it'll be how long to get to an Interstate - and there speed limits will vary from 65 to 85 (in desolate places). Everyone drives anywhere from +3 to +10 over the speed limit.
After living in Texas for some time, you're going to hear about the regions and their appeal.
East Texas has pines, heavily forested, and some swamp like areas.
Central Texas has rivers, rolling hills, and Oaks.
Central coast property is really quite flat, quasi tropical.
North Texas has lower rolling hills, lakes, rivers, Oaks.
As you move westward, the Oaks begin to thin out, replaced by mesquite and eventually mostly grass scrub, rocky sandy soil, and cactus.
From San Angelo west is very dry.
The panhandle is flat, lots of agriculture, and plains. West / Northwest of DFW there are rolling plains and oak.
Food in SE Texas is BBQ, seafood, and Cajun. As you move north, more heavily BBQ.
As you move NW, it'll transition to heavy Czech influences and game (Venison, wild hog)
Keep going, and you'll in Steak and Potatoes land.
Go south, Tex Mex and seafood.
West, Tex Mex and Southwestern (Lots of chili [like Hatch Green Chilis] flavors, less pepper [Jalapeño] influences).
Throughout Texas, Mexican food is a staple. If you don't like Mexican food there are still lots of options.
That's just a general map, your mileage may vary.
You'll find great asian food in Houston.
In the end, Fren - Texas is large - very large. ~269K square miles. Bigger than Germany.
It's very diverse in culture and environment.
SE Texas is going to feel like a blend of Big Oil and Crawfish boils. It's hot and humid. But it's wonderful.
Everyone is different, and that magical place they have in the minds will greatly vary - so I hope you find what you're seeking.
One last thing about living in Texas. Get to know your neighbors and don't be afraid to knock on strangers doors and meet them before buying anything.
I'm dead serious.
Most will be friendly enough, and you'll find some neighborhoods are quiet and people keep to themselves, while others regularly break out folding chairs and drink together every weekend. You'll also get the feel for what life will be like there, how crappy the Internet is, and what's on the horizon for where you're looking in regards to road improvements, etc.
Depending on what you want - this will matter.
