They are yummy... I dust em with flour then brown em in bacon fat...then I wet roast em in a cast iron dutch oven.. layer the squirrel with the the bacon, and bacon fat and greens I prefer mustard or beet greens..Season them... I like a little sage salt n pepper keep it simple as this recipe works with rabbit, maybe add some stock or red wine to get the moisture right and then roast 325 until the meat falls off bone..yum..
