You may be right but most people are numb to the advice of so called dietary professionals. Obesity in America spiked when they told people carbs were better for you than fats. There is so much we don’t know about how the body metabolizes and balances different diets. It’s complex and that’s why “scientists” keep changing their minds.
No need to scare quote. Science is supposed to be malleable and its insights today are not meant to be proclamation of absolute truth.
You should expect science to contradict itself. That means we're learning. Again, for emphasis: nothing science says is absolute truth.
When you take the religion from a culture that culture will find something else to grant that kind of ultimate authority. Science is what fills the gap for most today. Also I'm pantheist.
All fair and I agree for the most part. If only media or relevant authorities cast scientific consensus in the light you just described then fine. But it usually comes in the form of settled science and how dare you disagree. Like these signs I see on people’s lawns that say “science is real” as if we all deny science if we disagree with their settled interpretation.
Like I said, it's the new religion. Notice how there are priests that get up in front of us and give us the Delivered Word and there's no speaking against it, testing it for validity, etc (how science actually works).

I am a young earth creationist so I’m sure that Is a can of worms for you but I say that because we are always questioning and verifying and theorizing - whether it’s with geology, biology, physics or history (verifying discovered biblical manuscripts or other sources). I love using reason to enhance my faith. I see no enemy in science as I believe God gave us the tools to discover him through his wonderful creation.
Many people are different too, and what's okay for one person may wreck another. Too much cholesterol is generally never a good thing, though, which is why I don't ever eat a lot of fried food.
