You know when Thanksgiving turkey has been in the fridge for a few days, and you spot a piece of dark meat on the bottom of the roast pan that's just started the process of becoming jerky?

Of course preparation is key. A friends grandmother made exceptional squirrel gravy with biscuits and people would never guess it was squirrel.
