I've heard soiu vide is a great way to cook food, but it just seems too much like boiling it for my tastes. Then again, I like my steak black and blue.

I have been a skeptic too, on soiu vide. Turns out, it never boils. Its smoking, without smoke, in water. You can do a full pork shoulder, slowly bringing it up over 24 hours, and have it sit right at the perfect 202*, without it getting mushy from fluid (like in a crock pot). Its an amazing thing, but had to be schooled on it about a month ago.
