People misunderstand this all the time, but hitting something with a bullet, even if its flammable, wont always cause ignition. Either the bullet strike would have to cause a spark, youd have to use tracer/incendiary rounds, or there has to be an external source of ignition. Ive seen more than one disappointed shooter take a propane tank to the range, shoot it, and watch it spin wildly on the ground with no fireball.
I grew up in Detroit, it's probably one of the most common places to get shot at (look up, Murder Mac Detroit). No gas stations have blown up there due to shootings, to my knowledge.

I've never heard of or seen it either, and have seen lots of gas station shootout videos, but on paper it seems like a dangerous combo.
