My wife’s family introduced me to this one: some olive oil drizzled over them after you cut them in half, add garlic, shredded parmesan cheese, roast for 15 or 20 minutes until they start to get crisp, take them out of the oven and hit them with a little lemon juice and lemon zest.
Deep fry. Ideally in duck fat. Right after they come out toss in a warm vinaigrette of garlic, shallot, lemon juice, capers, fish sauce, good olive oil, salt and pepper. Serve immediately.
Don't think breaded or battered, just straight in the hot fat after they've been trimmed. If they're large, cut in half.

Wash, cut in half, spread out on cookie sheet. Drizzle with avocado oil, apply fresh cracked sea salt and fresh cracked pepper, bake at 425 Fahrenheit until they get a light to medium toast on them (maybe 20 to 30 minutes?), as much as you like. Serve.
