Deep fry. Ideally in duck fat. Right after they come out toss in a warm vinaigrette of garlic, shallot, lemon juice, capers, fish sauce, good olive oil, salt and pepper. Serve immediately.
Don't think breaded or battered, just straight in the hot fat after they've been trimmed. If they're large, cut in half.
