Its because Amsterdam is a main hub of transatlantic internet traffic, everyone in the EU who use a VPN shows up as Dutch.

I thought you could pick your VPN from practically any country. Are Dutch IP addresses not subject to restrictions and/or simply more convenient than other VPNs?
The Netherlands were early adopters of the internet and as such are a gateway to most traffic between Europe and the rest of the world.
This means a lot of companies are hosted out of the Netherlands including most of the VPNs but also a lot of tor nodes, its a convienence for them to plug directly in to the main transportation hub.
Most european data centers are in the Netherlands.
Also, because of EU privacy legislation a lot of US sites have chosen to block EU visitors, which lead to more VPN use
