Assuming a fair election, does anyone know what would happen with absentee ballots cast for a candidate who then dies/drops out before election day? Would they be returned for re-submittal, kept as cast for Biden, or auto-swapped to the replacement candidate? Seems like keeping them as cast would be the simplest way to go, but I don't know what the actual process is.

The votes are counted, and in the case of the deceased actually winning, they are replaced per the laws governing that position. This has already happened in many lower elected positions. You don't get do-overs on the election.
