If you want to penetrate, get a slug. Or if you insist on buckshot, 000 buck penetrates far better than 00 buck. One less pellet, but they weigh about 35% more each and are .03" wider with the same velocity - So they've got a LOT more inertia. And you don't get the "9th pellet flier" that's common in 00 buck.
If you want plenty of wound channels without over penetration, #4 buck is the king It boasts 28 pellets of .24 calibre so you are absolutely going to hit something vital if you put a shot into centre of mass.
If you absolutely have to compromise, or want a single do-it-all load, #1 buck is still better than 00. 16 pellets (almost double what 00 offers) of .30 calibre, so you're not losing much in terms of penetration.
But for home defence, I'd recommend #4 buck all the way, with 1 1/8 oz slugs on a side-saddle for when you need to penetrate cover.

Sub sonic? .375 Raptor (it's necked up .308 analogous to how the .300BO is a necked up .223).
Hell there's even the .45 Raptor, which is a straight walled .308 case with a.45 cal pistol bullet, to replicate the .45-70 ballistics in a bolt or semi auto if you ever wanted that for some reason.
But a competition series I go to only allows "military calibers" so I'm stuck with choosing a sub optimal cartridge because there are fudds even in the long range precision community.

New York State is still really shitty for guns. I grew up there and the real difference between upstate NY and the city is no guns vs fudd guns. I had some cool stuff back in the early 90s but those days are long gone. You can't get anything cool anymore due to all the restrictions they've piled on.

A prepper should make sure they have something to cover basic self-defense (concealed carry hand gun and a suitable long arm for defending the home - and something effective for out to 300 meter engagement - if you don't have anything, consider an SKS - that Russian 7.62x39 is still pretty much available, the stripper clip loading system is actually very, very sensible and still plentiful to purchase too, and this Russian cartridge is about par with a 30-30 - though sports a pointy bullet instead of blunt).
But then should have a 22LR and and a decent air rifle. Buy pallets of 22LR (okay, at least several bricks) and 5 gallon buckets of pellets for the air rifle.
And if the SHTF and have to forage for small game, those air rifles will do a dandy job. Tons of rabbits running around. Clip one of them with an air gun. Lots of wild turkeys - take a head shot on one for the dinner table (air rifles can sport scopes too).
And from a prepper perspective, I'd then have a 30-30 lever gun. Well, hell, something in either .308 or 30-06 too (but maybe you don't live in elk/moose country) - as eventually going to get tired of eating rabbits.

But after a few trips to the range, I decided it was perfect the way it is, like uncle Stalin wanted it. It's never going to be anything but an SKS, but it's a good Commie gun.
The best is stripper clips with a mag. Like the FN or M-14. But since your average Commie conscript would lose or sell a mag, the built-in one is fine. If I were to be picky, I would say the SKS has too many parts. A bolt carrier, a gas piston that pushes on the bolt carrier rod, a spring in there too. And beware that SOB flying off if you field strip it. I suppose you are not to do that in the field in the dark. Probably supposed to get shot before you have to clean the rifle. Personally I think the M-14 has it right. A few big clunky parts and no tools needed.

Nice Churchill! Just a word of advice: I had one of those SPIKA shell-holders on my shotgun and after I fired a few 1 oz slugs, the shell holder kept sliding up the gun towards the trigger. I ended up returning it and bought another shell holder that includes a strap that wraps around the end of the stock, preventing the shell holder from riding forward.
My wrists don't agree with pistol grip on a 12 guage, switched my Stoeger 3000 semi back to regular stock after going to all the trouble of ordering the parts and swapping to pistol. Ergonomics of recoil just don't fit me above AR-10 levels. Good on you, 12 guage is a fun time with reactive targets.

Forget the weather. I loved the snow in NY but If you have a fighting spirit TX is great. The state has protections for gun owners and I am confident they will pass constitutional carry soon. Blunt weapons and sword are also legal(including knuckles) and no red light cameras statewide. If you plan on voting red TX needs you. It took me just one season to get used to the weather. 18 days to get my CCW. Besides that you can carry in the car with no permit and no long gun restrictions. Also you can own whatever you want besides the federal restrictions
