This is a really bad suggestion. If you don't believe Apple is tracking you, then you're in for a big surprise. That telemetry data is worth a bundle, and Apple will gladly sell it.
Apple is also horrible for user choice and control. Apple controls your iPhone, not you. You have only one place to install apps from. And if Apple doesn't like the app, you can't have it. That's "doesn't like", not "app is harmful or deceptive", but "doesn't like". Apple thinks it competes with one of their apps? Gone. Tim Cook's sexual advances on the guy that wrote the app got turned down? Gone. It's a Wednesday and one of the Apple app store gatekeepers is bored? Gone.
Google isn't much better, but at least you've got more control over the device and can install apps from other sources than just the Google Play store.
