There should be NO counting after election day. If everyone is mailing ballots in early then the results should be in as soon as the polls close. No waiting to see how many votes the Dems need to "find" after election day!
Yeah, that's not how it works. If I don't show up on election, I don't get to vote. If you don't mail in your vote by election day, you don't get to vote. There is zero reason it should take longer to count votes, our population is relatively the same as last election.

Oregon, for all her many many faults, has a cutoff a few days before. If you miss it you drop your ballot off in a box. Unless they changed it
