Yeah, that's not how it works. If I don't show up on election, I don't get to vote. If you don't mail in your vote by election day, you don't get to vote. There is zero reason it should take longer to count votes, our population is relatively the same as last election.
Votes postmarked on election day should be tossed. You had months to do it, and it’s not an e-mail; it takes days to process mail. Too bad, vote in person if you’ve procrastinated that much.
In theory ballots must be postmarked by election day.
But as we know from Comrade Stalin, "it's not who votes, it's who counts the votes."
The extra time allows them to figure out how many votes they need to steal. Election workers who happily generated fraudulent ballots in back rooms in prior elections aren't going to have any trouble here.
That said, if Trump's margin of victory is sufficient, and an army of attorneys are present in the states where it matters, they won't be able to get there.

Oregon, for all her many many faults, has a cutoff a few days before. If you miss it you drop your ballot off in a box. Unless they changed it
Except that some states are allowing or trying to allow ballots with incomplete or missing postmarks.
Here's just one, but any search engine will turn up hits.
