The infallibility of a pope is separate from the core of Catholic teaching and the Seven Sacraments. Having a pope isn't even close to being the most important theological difference between Catholics and Protestants. You want an example of an ideal Catholic who actually adhered to Catholic teaching, look to the great Antonin Scalia. The guy was a traditionalist Catholic. Look up sedevacantism and Marcel Lefebvre for starters.
