If the democrats won and was able to pass legislation to increase the amount of judges on the Supreme Court I’m betting the case would end up at the Supreme Court right? That would require the Supreme Court to uphold the law. Seems unlikely?

I can't see a reason for SCOTUS to strike it down, since the Constitution is silent on the question of the number of justices on the SC.
The number of justices is not prescribed by the constitution
I dont think so. Just the House, Senate, and Presidency.
It would set a very bad precedence that might result in more judges than senators in a few generations.
