While I agree, they are likely under long contract and to walk away you'd often have to pay millions, and it would also mean all the people who work on your show under you would lose their jobs in the meantime, or you would at least have to float them until you got a new show.
It's not as simple as uprooting to a new network when your show is responsible for the income of 20, 30, or more families at Fox News, many who have been lifelong friends. The logistics of it all are very difficult. I guarantee you many of them want to but they are hesitant to move for reasons like this. They realize it's bigger than themselves. But, with time, they can devise a strategy to make the move.
So you're saying it's easier to lock the network bosses out of the building and start your own rogue network with the infrastructure and desks/cameras/makeup you liberated from their building into what we're now calling 'your' building. Ta Da, everyone still has a job, except those who don't.
