All Indian food does not taste the same. There are many wonderful dishes that have distinct flavors and I have made from scratch and enjoyed many myself.
Western cuisine is wonderful and certainly uses a variety of delicious spices, seasonings and techniques, but it does not stand alone on the stage of delicious food.
Because cultures around the world including western ones haven’t done the exact same thing at some point in time.
You act like a dish can’t be enjoyed because it may have been used or even developed to mask bad food? Sounds like maybe it did a good job and is therefore tasty.
This thread is starting to sound more like an indictment of people and their cultures instead of the merits of good seasonings and food.

Indian food = protein/veggie + every spice in the cabinet + heavy cream.
How else you going to cover up the taste of rotten meat?

We also used to shit in holes in the ground, but we stopped doing that centuries ago too.

First of all, while there are certainly Indian dishes like this, they aren’t all like this.
Secondly, I’ve made western dishes with far more seasonings than Indian dishes.
The more seasonings you can fit in, the more layers of flavor. Hence “11 herbs and seasonings”. Look up “the spice companion” by Lior Lev Sercarz.
