If they are prepared & hung properly Wild Turkey is basically no tougher than the farmed except for the legs as they use them more & we actually think the breast meat on the Wild are sweeter . As a hunting guide that eats a lot of game l can tell you as long as the game is quickly killed, properly bled ,Cleaned & butchered in the field ,then properly hung & stored at home 99% of any game meat toughness you hear about disappears ,the fact is if you treated a piece of wagyu beef poorly it would be tough as well.
To give you some idea about the misconception that all game meat must be tough & tastes funny ,we have our own Cattle Ranch & my family was among the original Cattle ranchers in Montana .In our Ranch with me running a guiding business for part of the year we prefer to eat l would say 60-70 % of our meat as game meat purely on flavor & the health benefits .
As l say if game meat is treated properly just as you would expect the farmed meat you buy in most cases it is superior in our opinion & we breed cows for market.
