Go with Linux Mint, it's an Ubuntu port with spyish features like Snap apps removed and it's better. Canonical (Ubuntu peeps) are a bit suspect these days. Mint was a piece of cake (Linux is a still a whole new OS with a learning curve) and they are all freaking free, 100's of flavours of open source goodness.
