This is why people have to register every trip on Uber/Lyft/etc. Even if they get a percentage of the transaction (I don't use their services, so I don't know exactly how it works) it would probably be less than whatever government is going to tax you and if I had to choose between them and gov't, most would choose against gov't. Then again...if they raise the percentage they take, they threaten their own business again. So if their percentage remains less than what gov't takes, it's a fairly simple choice. A hassle? Yes. But if we aren't willing to fight government at all stops however possible then we might as well raise the white flag right now and go to the train station.

EDIT: Also, didn't Uber/Lyft have a fight with government a while ago specifically about tax status. They claimed their users were independent contractors and not employees, so something like what you proposed might threaten that claim. And back to the courts they go.
