Here's my favorite Goya recipe that is super healthy and super quick. It literally takes 60 seconds to prepare and about three minutes to cook. Serves two people:
- 432g can of Goya Whole Kernel Golden Corn
- Chicken stock cube or powder to taste
- 2 teaspoons soy sauce
- 1/8 teaspoon chili powder
- 1 tablespoon corn starch
- Remove 1/3 cup kernels and set aside.
- Blend remaining kernels and the liquid from the can until very smooth.
- Add one can of cold water and remaining ingredients and blend briefly to combine.
- Transfer to a microwave proof jug and add the kernels from the first step.
- Microwave until it thickens, stirring very often to prevent the starch from clumping at the bottom of the jug.
- Serve with slices of buttered bread. Decorate with a swirl of cream and fresh parsley if you're feeling fancy.
