The Taarna character in the movie is done with "rotoscoping" which is an early version of today's "motion capture" technique for translating actors' motions to animation. The model (Carole Desbiens) acted out Taarna's scenes, then artists manually traced her frame-by-frame to make the animation. The flying scenes are done in a similar way, with real aerial photography (and miniature landscapes) manually traced as animation frames. Here's a short video showing how that process was done.
