Canning in small batches is so much easier!! I’ve made two small batches of “cowboy candy” with jalapeños, habeneros, and lunchbox peppers, as well as two quarts of bread and butter pickles, two quarts of sweet pickles, and some salsa in the last month. That’s four canning sessions, and it’s not as exhausting as a full day or weekend of canning, and it’s so satisfying to hear the “pop!” when each jar seals itself.
