HOW TO TURN OFF ICLOUD:
On a Mac computer go to System Preferences - Apple ID or iCloud - iCloud to turn off.
On an iOS Device go to Settings - tap your name at the top - iCloud - toggle off.
Check iCloud.com for what is actually in the cloud. Best on a computer because if not you don’t see all categories. If it’s there, Apple has it. There is also more because things like Messages and WhatsApp data can be turned on and you won’t find them in iCloud.com.
Messages will be stored in iCloud backups if they are not turned on in the iCloud so consider deleting backups.
If Messages is turned on in Settings - name - iCloud then they will be in your backup. If they are turned on there then they are synced to the iCloud. Sync means they go right away to iCloud and are NOT in your backup.
Things that sync: Photos, Contacts, Mail, Calendars, Notes, you can turn Messages on to sync.
On a Mac it’s Messages - Preferences - iCloud.
Remember 3rd party apps can store on the iCloud as well. WhatsApp is basically automatically storing in the iCloud for instance, unless you turn it off. Look for it and other 3r party Apps in the list of Apps using iCloud at the bottom.
