It seems like a third man, a neighbor named Roddy, jumped into their truck and started attacking the son. He apparently reached for the son’s shotgun, which apparently went off as they struggled? Maybe the third man was the one who wanted Arbery dead and was trying to take the shotgun from the son when it went off? It’s definitely a weird situation.
