Keep a daily log of your biometrics. Take your readings at the same time each day. Weight, temperature, blood pressure, and a photo of your face. DO THIS FOR AT LEAST 7 DAYS BEFORE YOUR FIRST VACCINE, AND EVERY DAY UNTIL 10 DAYS AFTER YOUR LAST VACCINE IF YOU TAKE THE TWO STAGE VACCINE.

If at all possible, get a blood draw FIRST that gets sent to a lab for all of your regular blood tests.

In a perfect world, this is overkill for protecting yourself.
If shit goes sideways, you've created a preponderance of evidence for any claims you may need to file.
Most vaccine injury claims get denied because of lack of evidence or lack of timely filing.
