Some of it is listed with MLS, if you go through an area there are a lot of land for sale signs posted on the land itself that aren't listed online, think non-main roads.
Also if you want a really good deal go to the county tax assessor site for the county you are looking in... usually there is a map where you can click on each parcel to see who the owner is etc. Look for land without "improvement value"... that usually means there isn't a house on it. If the improvement value is low there may be a pole barn or well on it that counts towards the value. Look for land that is accessible from the road and not landlocked or you will have trouble getting to it.
The owner's address information is usually listed for each parcel... look for someone with an address out of state or in a different city than what you are looking in.
